The duck foie gras from Ferme Jean Sarthe, delicately semi-cooked in-house, reveals its aromas beneath the sweet notes of Pineau des Charentes and a rhubarb jam from Hauts-de-France by FAUCHON. Next, white asparagus from the Landes region is savored beneath layers of smoked duck breast, puffed buckwheat, and a hollandaise sauce.
For the main course, head to the Alpine foothills with Arctic char, served with grilled broccolini and Provençal peas, and a beurre blanc infused with FAUCHON peppermint.
Why not try the Gâtinais chicken, seasoned with morels and complemented by a potato mousseline?
Finally, Charente brings this exceptional dinner to a close with a Baba au Pineau des Charentes, served with FAUCHON bitter orange marmalade, blood orange sorbet, and vanilla whipped cream
